Makes 12 servings
Cake:
1/2 cup vegetable oil, plus some to grease the baking pan
1 3/4 cups all-purpose flour, plus some to dust the baking pan
2 cups granulated sugar
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
2 teaspoons vanilla extract
1 cup boiling water
Frosting:
1/2 cup (1 stick) butter, melted
2/3 cup cocoa powder
3 cups confectioners' sugar
About 1/3 cup milk
1 teaspoon vanilla extract
1. Prepare cake: Grease and flour a 12-cup bundt pan and set aside.
2. In a large bowl, stir together granulated sugar, 1 3/4 cups flour, the cocoa, baking powder, baking soda and salt. Add eggs, milk, 1/2 cup oil and the vanilla. Beat with an electric mixer at medium speed for 2 minutes.
3. Stir in boiling water (batter will be thin). Pour batter into prepared pan.
4. Bake in a preheated 350-degree oven until a toothpick inserted in the center of the cake comes out mostly clean, about 50 to 55 minutes.
5. Remove cake from oven and let cool in pan on a wire rack for 15 minutes. Remove cake from pan and set on rack until cooled completely.
6. Make frosting: In a medium bowl, combine melted butter and cocoa. Alternately add confectioners' sugar and milk, beating frosting to spreading consistency and adding a little more milk if needed. Stir in vanilla. Ice the cake with the frosting.
